About El Cipres
On the north west slopes of the Picacho Volcano, the El Cipres estate is located in the Bálsamo-Quezaltepec coffee region, within the municipality of Nejapa, San Salvador. The farm was originally bought in 1880 by Dr. Emilio Alvarez Lalinde, when his family migrated to El Salvador from Colombia.

Tash from Pharmacie Coffee – “To be honest since I bought a Kalita wave carafe, it is hard to manual brew any other way as it is such an effective extraction method. 30g in. Coarse cafetière/CleverDripper grind. Overall water weight will be 400g and extract in around 6 minutes.
The tricks: 80g first pour, agitate and leave to bloom for 1 minute, the longer gas release I find to be a really effective manual brew technique. Then small pulses of water up to the desired weight, agitating between each pour. Boom. One delicious flat bed filter brew.“
